Zucchini Pasta w/ Alfredo Sauce

Now I know what you’re thinking…raw Alfredo sauce?!? How can this be? Well my friend you will just have to try it and see. I had a friend over who was skeptical of the dish (she was concerned that she would not be full off of zucchini and a little sauce), but oh! she may have came as a skeptic, but left a believer!

Behold!

Zucchini Pasta w/ Alfredo Sauce, fresh basil leaves, tomatoes

(serves 4 – 6)

 

3 Zucchini, spiralized
Fresh Basil, to taste
Mini Tomatoes, halved

Sauce:  (This sauce is a great base for lots of various spice combos)

2.5 C Cashews
1 T Lemon Juice
3 Cloves Garlic
1 t Fresh Thyme
1 t Sea Salt

 

Blend everything until a creamy sauce is formed.

 

Additions:

Garlic Salt

Red Pepper Flakes

Nutritional Yeast

Black Pepper

    Just had this for dinner (used my new spiral slicer) and it was delicious!!! Used fresh zucchini, garlic and basil from our garden and the flavors were amazing! Just started eating raw foods and this is a keeper!!

    So, this looks delicious and I made it, but my sauce was nowhere near creamy. It is pretty darned dry and lumpy, better eaten with a fork! Any ideas? Thanks!

      Hi Susanna,

      Thank you for visiting my site and trying out my recipe. Try blending the sauce for a long time…and if it is still dry add water a little at a time until it becomes creamy and saucy.

      Hope that helps.

    • Haven’t made this (yet!) but I am guessing that the TYPE of blender makes difference too (vitamix vs non vitamix)?

        For this particular recipe, when you’re just blending things together, you can get away with a generic blender. My advice would be to watch the order in which you stack the ingredients in the blender, for example putting liquid in first and then spices and then nuts.
