Dirty Dozen

I just got this fantastic new app called “Dirty Dozen.”

Basically there are two lists: The Dirty Dozen + The Clean Fifteen.

The Dirty Dozen – 12 contaminated foods that are high in a number of pesticides.

Buy organic if possible!

Cinnamon Cranberry Scones

Cinnamon Cranberry Scones

Makes a lot (approx. 3 dozen)

3 C apple sauce

2 C carrot pulp

2 C almond meal

1/2 C raisins

1 C dried cranberries

1/2 C coconut oil, liquid

1/2 C agave nectar (or other sweetner)

1 C flax meal

1.25 C water

1.25 C brazil nut pulp

1/8 C cinnamon

2 T ground cloves

3 T vanilla extract

To make the apple sauce:

Process apples in food processor until they become sauce like.

1. Combine apple sauce, carrot pulp, and almond meal.

2. Add dried fruit, coconut oil, and agave.

3. Blend flax meal and water, Add.

4. Add spices, brazil nut pulp and water.

Shape into scones.

Dehydrate 8 -12 hours.

Butternut Squash Pasta

Butternut Squash Pasta

(serves 2 – 4)

1 butternut squash

salt

1 tomato

4-5 button mushrooms

3-4 leaves of basil

extra virgin olive oil

balsamic vinegar

To make the pasta:

spiralize the squash into noodles and sprinkle salt on top.

Let sit for 10 minutes to soften the noodles.

(rinse the noodles after, they will be salty)

Mix with extra virgin olive oil, balsamic vinegar, + seasonings of choice.

Add tomatoes, mushrooms, and chopped basil.

Served on a bed of spinach, topped with nutritional yeast.

Today I had the pleasure of preparing a few goodies for a new juice bar opening up in the area.

I made:

DATE ALMOND COOKIES

(makes approx. two dozen)

These cookies came together quite nicely.

The flavors of the almonds, carob, cinnamon, & dates create a sort of creamy, crunchy texture, they almost remind me of fig newtons.

Carob Date Filling: 

3/4 c almonds

1 T tahini

1.5 c california dates, soaked

1/4 c carob powder

1 T vanilla

1. Process almonds.

2. Add everything else & process until the mixture is incorporated (it will be sticky).

Cinnamon Almond Crust:

1 c almonds

2 T + 1 t agave nectar

pinch salt

1 t cinnamon

1. Process almonds.

2. Add everything else.

3. Process until the crust starts to come together.

To assemble:

Start with a rectangle of plastic wrap, form crust into a rectangle.

Place the filling on top of the crust.

Roll into log.

Refrigerate for at least an hour.

Cut off in desired thickness.

coconut breakfast cakes

COCONUT BREAKFAST CAKES

serves four

2 c whole flax or 3 c flax meal

2 T liquid coconut oil

1/2 c agave nectar

1/2 t sea salt

1/4 c water

2 T shredded coconut

mix and shape.

crust: almonds, cocoa, dates, agave, coconut oil, salt

cheesecake: cashews, water, dates

topped with fresh blackberries from my parents garden.

spring is in the air.

and its time for the farmers markets to start again here in Atlanta.

I am selling my raw food treats at the Midtown Market, right next to Bakeshop.

This week I had:

Strawberry Tarts with an almond & agave crust.

Chocolate Spice (cinnamon & clove) Cookies

Orange Chocolates (that ended up melting ;( )

Sesame Flax Crackers

all in all – it was a fun market.

now to just prepare for next week,
